Queso Chicken with Broccoli & Rice

Ingredients

 

1 package Warped Foods Queso prepared per directions on package

1 cup white or brown rice

1 bunch of fresh broccoli (or 1 package of frozen)

2-4 small chicken breasts 

2 tbls olive oil 

2 tbls. butter

salt & pepper

 

Cook rice according to package directions seasoned with salt & pepper to taste..  Steam or sauté broccoli, season with salt & pepper, and set aside (if using frozen then set out to slightly thaw).  

 

Meanwhile, trim fat from chicken breasts and lighty season with salt & pepper.   Heat skillet to medium heat and add olive oil and then butter.   Slip chicken breasts into skillet and cook on each side until golden brown and the juices run clear and is fully cooked (about 6 min each side).  Plate chicken, rice and broccoli and spoon over desired amount of Warped Foods melted queso.  Serves 2-4
